Ingredients:
2 cups all-purpose flour
1/2 cup Meetha (stevia product)
1/4 cup unsalted butter, softened
1/2 cup milk
2 eggs
1 teaspoon vanilla extract
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
A pinch of salt
1/2 cup chopped nuts or raisins (optional)
Instructions:
Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
In a mixing bowl, combine the softened butter and Meetha. Mix until well combined.
Add the eggs and vanilla extract to the butter and Meetha mixture. Beat until the mixture becomes creamy and smooth.
In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and a pinch of salt.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Start and finish with the dry ingredients. Mix until just combined; do not overmix.
If desired, fold in chopped nuts or raisins into the batter.
Pour the batter into the prepared loaf pan, spreading it evenly.
Bake in the preheated oven for 45-55 minutes or until a toothpick inserted into the center comes out clean.
Allow the sweet bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
