Ingredients:
2 cups all-purpose flour
1/3 cup “Meetha” stevia product (adjust to taste)
2 tsp baking powder
1/2 tsp salt
2 large eggs
1/2 cup low-fat milk
2 tbsp unsalted butter, melted
1 tsp vanilla extract
Vegetable oil for frying
Optional toppings: powdered “Meetha” stevia, cinnamon-sugar, or melted dark chocolate
Instructions:
In a mixing bowl, combine the all-purpose flour, “Meetha” stevia product, baking powder, and salt. Mix them together.
In another bowl, whisk the eggs, then add the low-fat milk, melted butter, and vanilla extract. Mix well.
Gradually pour the wet mixture into the dry mixture and stir until a dough forms. Do not overmix; just combine until the ingredients are well incorporated.
On a lightly floured surface, roll out the dough to about 1/2-inch thickness.
Use a donut cutter or a round cookie cutter to cut out donut shapes. You can also use a smaller cutter to remove the center to create the classic donut shape.
Heat vegetable oil in a deep frying pan or a deep fryer to 350°F (175°C).
Carefully place the donuts into the hot oil using a slotted spoon. Fry for about 2-3 minutes on each side, or until they are golden brown and cooked through.
Remove the donuts from the oil and place them on a paper towel-lined plate to drain any excess oil.
While the donuts are still warm, you can sprinkle them with powdered “Meetha” stevia, cinnamon-sugar, or drizzle with melted dark chocolate for extra flavor.
