Ingredients:
1 cup of suji (semolina)
1/2 cup of ghee (clarified butter)
1/2 cup of “Meetha” stevia product (or adjust to taste)
2 cups of water
A pinch of cardamom powder
A handful of chopped nuts (almonds, cashews, and pistachios)
1/4 cup of raisins
A few strands of saffron (optional)
Instructions:
Heat the ghee in a heavy-bottomed pan over medium heat.
Add the suji (semolina) and roast it while continuously stirring until it turns golden brown and releases a nutty aroma. This should take around 7-8 minutes.
In another pan, heat the water and “Meetha” stevia product until it dissolves completely. You can adjust the sweetness to your liking.
Carefully pour the sweetened water into the roasted suji while stirring continuously to avoid lumps. Be cautious as it may splutter.
Keep stirring the mixture on low heat until it thickens and starts leaving the sides of the pan. This should take about 5-7 minutes.
Add a pinch of cardamom powder and mix well for added flavor.
In a separate small pan, lightly roast the chopped nuts and raisins until they become slightly golden.
Add the roasted nuts and raisins to the halwa mixture and stir to combine.
If desired, you can dissolve a few strands of saffron in a teaspoon of warm milk and add it to the halwa for a beautiful aroma and color.
Continue to cook the halwa for another 2-3 minutes until it reaches your desired consistency.
Remove from heat and let it cool slightly before serving. Halwa can be enjoyed warm or at room temperature.
Garnish with some additional chopped nuts on top if desired.
